There's lots of grassland in Texas where cattle can safely roam, but increasingly, livestock finds its way to highways and other roads in the Lone Star State, which poses safety risks not only to the animals but also to drivers on those roads. So authorities are bringing in experts -- referred to as highway cowboys -- whose job it is to round up loose stock and bring them back to the safety of state farmlands. It's an important, high-stakes occupation, but it's also one of the country's dirtiest jobs.
